Shrimp Ceviche

You can prep your ingredients a day or two before event, then mix together on the day of event. Quick and easy.
Serves 4-6 people, Prep is 15 minutes, Marinate time is 15 minutes to 6 hours (I prefer at least 1 hour)
Acid is what ensures the shrimp are safe eat. Technically it's not cooked as cooking requires heat. The acid process is referred to as denaturing.
PREP - 15 minutes, Marinating 1-8 hours, Serve - 5 minutes
INGREDIENTS
2 pounds shrimp raw (or white fish Sea bass, striped bass, grouper are best) or combine both
1/2 cup red onion thinly sliced
1 jalapeno ribs and seeds removed, then minced
3/4 cup cucumber diced
1 cup roma tomatoes seeded and diced
1/2 cup cilantro leaves chopped
1/2 cup lime juice
1/2 cup lemon juice
Dash of chili flakes (optional)
Last step before you serve
Add 1 avocado peeled, seeded and chopped
Serve with corn chips
DIRECTIONS
Mix all ingredients (except avocado), you can do this 1-8 hours before event
Add the avocado right before you serve
NOTES
Adding the avocado last ensures it won't get soggy
Lemon and Limes are acid based, this is what cooks the shrimp
