Salsa Verde Chicken and Cauliflower Rice

I love a recipe in one pot. Makes clean up easy, so you can enjoy your meal. This recipe is cooked in layers via the stovetop, and will finish in the oven.


  • 4 chicken thighs or 2 halves (double recipe for 4)

  • 1 medium yellow onion

  • 2 cups cauliflower rice

  • salsa verde (see recipe)

  • extra virgin olive oil (evoo)

  • cilantro and fresh limes for garnish


  1. Preheat oven to 350

  2. Saute yellow onion and olive oil, once done remove from pan and set aside

  3. Salt and pepper chicken and saute until the skin is easy to release and flip and saute the second side

  4. Once you sear both sides remove from pan, add cauliflower rice and sauteed onions

  5. Add chicken on top and pour salsa verde over the chicken (as much as you like)

  6. Bake at 350 for 25-30 minutes minutes

  7. Once removed add more salsa verde if you like and garnish with fresh cilantro and a squeeze of lime juice
