Pear, Onion and Parmesan Farinata

What is a farinata? My new favorite quick snack! Make it plain with herbs and use as a savory pancake for hummus or on it's own. Or add toppings like pizza, get creative.

Farinata is a type of thin, unleavened pancake or crêpe of chickpea flour originating in Genoa and later a typical food of the Ligurian Sea coast, from Nice to Elba island.
Chickpea flour is high in protein!


  • 1 cup of chickpea flour

  • 1 cup of warm water

  • 4 tablespoons of olive oil

  • salt and pepper

  • 1/2 pear thinly sliced

  • 1/2 small yellow onion chopped and sautéed

  • 1/4 cup shaved parmesan cheese

  • 1/2 cup arugula


  1. Preheat oven to 400, put cast iron skillet in oven while pre-heating

  2. In a bowl, mix together the water, chickpea flour, salt, 2 tablespoons of olive oil, set aside

  3. Slice then saute onions, while onions are sautéing thinly slice a pear and set a side

  4. When preheating is complete, pull out the cast iron skillet, and add 2 tablespoons of olive oil - coating the bottom of the pan, pour in the flour mix, then top mix with the pear slices and sautéed onions

  5. Put in oven and cook for 12 minutes

  6. When cooking is done, let it sit in the pan for 2-3 minutes. Once time passes - you may need to use a spatula to run around the sides of the farinata and the pan, slide the farinata on to a plate or platter, now add arugula and shredded or shaved cheese then slide into 8 pieces
