Peach Crisp Recipe- gluten free

Yummy peach crisp and gluten free. You can also substitute apples or apricots if you prefer.
INGREDIENTS
Filling:
6-8 peaches peeled and chopped (about 6 cups)
1/ 4 cup honey
2 tablespoon cornstarch
1 teaspoon vanilla
dash cinnamon
Topping
1 cup gluten free oats
1/2 cup gluten free flour (cassava or apf, or almond)
1/3 cup brown sugar (or coconut sugar)
1/4 cup melted butter
1/2 cup greek yogurt
optional chopped pecans 1/3 cup
Garnish options
Garnish: more pecans
Garnish: sprinkle cinnamon
Garnish: whip cream or ice cream
Garnish: additional peaches, drizzle some honey
DIRECTIONS
Preheat oven to 350 degrees F, and grease a 9x9 pan
In a 8x8 baking pan add the chopped peaches, honey, cinnamon, vanilla, cornstarch, stir until all peaches are covered
In a mixing bowl add the gluten free oats, flour, melted butter, sugar, melted butter and chopped pecans, stir then add the yogurt and stir until it's mixed well
Once combined, spoon the topping mixture on the the top of the peaches mix. Optional you can add a dash of cinnamon or more brown sugar on top
Bake for 30-45 minutes (when the topping is bubbling and golden brown you are done)
Let it cool some before serving
I like to add dairy free whip cream or ice cream
