Fresh Spicy Peach Salsa


  • 3 large peaches- ripe diced small, with or without skin

  • ½ a medium red onion, finely diced ( about 1/2 cup)

  • 1 medium tomato, finely diced

  • 1 jalapeno, very finely diced (add a little at a time, you determine how spicy you want it)

  • 1/4 cup to 1/2 cup chopped cilantro stems and leaves (save some leaves for garnish)

  • ¼ cup fresh lime juice ( 1–2 limes)

  • 1/4 teaspoon salt and pepper more to taste

  • 1/4 teaspoon chipotle pepper (optional)


  1. Gently rub peaches with a cloth towel to help remove peach fuzz, then rinse under cold water. Or remove skins if you prefer, you can do this by dropping them in boiling water for 30 seconds, then put into ice cold water bath to cool, then the skins should slide off (this method is also great for removing tomato skins).

  2. Dice peaches, tomato, onion, half of the jalapeño, and cilantro and add to a medium bowl. Add lime juice and pinch of salt. Taste, determine if you want more jalapeno. Add 1 chopped chipotle pepper

  3. Taste, and and adjust according to preferences. Add more salt or lime juice if needed or chipotle pepper.

  4. Serve with chips or makes a great topping for shrimp or fish too.
